In the dairy industry, homogenization is a mechanical step that breaks down fat molecules so they stay evenly distributed in milk or yogurt. 

By skipping that step, we allow the cream to separate naturally and form its own delicate layer on top.

We then add live bacterial cultures to the milk, which ferment the lactose and transform it into yogurt. At Tree Island, this is done using a traditional kettle cooking method that produces a smooth, light texture. The result is a yogurt that’s creamy, wholesome, and full of flavour.
