Cherry & Greek Yogurt Pops
Makes 8 Popsicles
Nothing says summer, like Canadian Cherries! Sweet, juicy and tangy – you can savour the flavour a little bit longer with these Tree Island Yogurt pops.
Method
In a saucepan, add the cherries, sugar, lemon zest, lemon juice, and water.
Cook over medium heat for 8–10 minutes, stirring occasionally, until the cherries are soft and juicy and the mixture has reduced slightly.
Remove from the heat and allow the mixture to cool for 10–15 minutes.
Transfer the cherry mixture to a blender and blend until smooth. Allow the puree to cool completely.
In a jug for pouring, stir the Tree Island Greek Vanilla Yogurt until smooth. If desired, add 2–3 tablespoons of milk to create a thinner consistency.
Divide the cherry puree evenly among 8 popsicle moulds, filling each about halfway.
Top with the yogurt mixture, leaving about ½ cm (¼ inch) of space at the top to allow for expansion as the popsicles freeze.
Use a spoon to gently swirl the layers together.
Insert the popsicle sticks or lids and freeze for at least 4 hours, or until completely frozen.

- 4 Tbsp sugar
- Zest and juice of 1 lemon
- 2 Tbsp water
- 1 cup Tree Island Greek Vanilla Yogurt
- 2–3 Tbsp milk (optional, for a thinner yogurt layer)
